Maybe Sammy is a cocktail bar in The Rocks, Sydney, inspired by the spirit of 1960s Las Vegas — when the Strip was electric, the drinks were strong, and the show never really ended. It’s a nod to that era of charm, chaos and camaraderie. We built this bar to bring people joy. To make them laugh, feel seen, and leave a little lighter than when they arrived. That’s what hospitality is to us — and it’s what we deliver every night.
Signature Cocktails
Maybe Sammy has always been a bar built around performance — not just what’s in the glass, but how it’s delivered, revealed and remembered. Showtime takes that idea literally. A collection of twelve signature cocktails, each inspired by a moment in film or television that defined an era – scenes that stirred something, shaped decades, or slipped into the cultural stream long after the credits rolled. Every drink ties its flavour, technique and presentation back to the on-screen moment it celebrates, and is paired with its own short film.
